What would a trip to Hawaii be without an evening at a luau? Hawaii luaus range from big commercial events to intimate private gatherings. Before you decide which one to attend there are some things you should know. First and foremost luaus are celebrations. Traditionally they were held to honor the Hawaiian Gods and their representatives on earth. Over time Hawaii people began holding luaus to mark the major milestones in life. Preparations for a luau actually begin the evening before. After acquiring a fresh pig the men in charge dig a large hole that will become the imu or underground oven. In the bottom of the pit a fire is built which is then covered with stream-run lava rocks. These rocks hold the heat for a long, slow cook. After spreading the rocks and covering them with banana stalks to protect the food and create steam, the pig and various side dishes are placed on top followed by a covering of wet fronds and a layer of earth.
As the guests gather the following afternoon, the imu is opened revealing the feast within. Besides the pig, bundles of chicken laulau, sweet potatoes, taro corms and haupia are brought out of the pit. The hosts then add traditional island favorites like chicken long rice, squid luau and lomi lomi salmon to round out the feast. Modern luaus take this a step beyond by adding dishes such as grilled steak and lobster, whole fish, extensive salads and fancy desserts.
No luau would be complete without entertainment. After the dinner is well under way the sight and sound part of the show begins. Guests can expect a hula performance complete with torches, chants and drums. Then, for a more modern touch, some luaus will feature a slack key guitar ensemble playing contemporary Hawaiian music.
